The organically grown vines used to make Nit de Lluna Plena come from the Denomination of Origin Cava, specifically from the area of Comtats of Barcelona in Catalonia.


VARIETIES
Black Grenache and pinot noir.

 

PRODUCTION AND AGING
The harvest is carried out separately according to each variety seeking the balance between acidity and aromatic complexity to obtain an organic base wine. The coupage of the black grenache and pinot noir provides a good balance between freshness, intensity and complexity. Fermentation is carried out in stainless steel tanks at a low and controlled temperature. Once the base wine for the cava is made, it undergoes a second fermentation in bottles, with the corresponding addition of the tirage dosage through the champenoise method. The second fermentation and subsequent aging in horizontal stacks under special humidity conditions and a controlled temperature for a minimum of 10 months. This aging time gives it the “Guarda” category.
Finally, the removal and final disgorgement is carried out. It is a Brut cava, with a very subtle addition of liqueur d’expedition in which the concentration of sugars present range between 4 and 6 g/l.


TASTING NOTES
Onion skin-colored with pink reflections. Fine and playful bubbles.
On the nose, the aromas of brioche and cherry stand out, accompanied by aromas of blueberries and balsamic notes. In the retronasal olfaction, aromas of wild strawberries and light mineral touches are perceived.
On the palate, it is a sparkling cava which presents a magnificent balance between acidity, body and complexity being fresh with a slightly unctuous texture.

SERVING NOTES
Ideal to accompany all kinds of savory or oily dishes such as a brothy rice, fideuà, salmon tartare, all kinds of cold meats, prawns, clams and oysters.
The optimal serving temperature is between 4-8ºC.
