ORIGIN • DO EMPORDÀ

The vineyards that produce this wine are in the municipality of Capmany. The diversity of the terroir of the area, highlights of which are sandstone and slate, provide a particular complexity that, together with the Tramuntana north wind, creates a traditional wine with character.

 

VARIETIES

Black Grenache, Cabernet Sauvignon and Merlot.

 

PRODUCTION AND AGING

Each varity is harvested separately in search of the best balance of each. Fermenting takes place in stainless steel tanks, separated by variety, with long maceration contact with the skins. Aging takes place for a year in old American oak barrel for each variety and the wine is left to settle in the bottle for two years.

 

TASTING NOTES

Glossy, medium depth, red ruby colour.

The aromatic profile emphasises a spiced entry leading with black peppercorn and red pepper which give away to hints of wood-smoked toast and very ripe fruits of the forest, with hints of currants and blueberries. The finish contains aromas of dairy products and nuts such as almonds. On the palate, it shows good acidity accompanied by some well-rounded tannins with character. It is a very lively wine that involves well in the glass.

 

SERVING NOTES

Decant the wine prior to serving to obtain maximum aroma and taste.

Ideal for accompanying red meat, stews and rich dishes. It goes very well with rustic cuisine such as veal with wild mushrooms and bubble and squeak.

Optimal serving temperature 15°C - 17°C.
